Ingredients used

  • 1 egg (for egg wash)
  • 300 g ground beef (or plant-based alternative)
  • 1 tbsp olive oil
  • 1/2 red onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder (to taste)
  • Salt and pepper
  • 1/2 white onion, finely chopped
  • Fresh cilantro leaves
  • 1 lime, cut into wedges

Preparation

  • Step 1

    Preheat the oven to 350°F (180°C). Roll out the LeCoq croissant dough and cut into circles about 12–15 cm (5–6 inches) in diameter.

  • Step 2

    Place the circles on a baking sheet and drape them over a taco rack (or oven rack) to create a shell shape. Brush with beaten egg. Bake for 12–15 minutes, until golden brown and crispy. Let cool slightly.

  • Step 3

    Heat olive oil in a pan over medium heat. Sauté the red onion and garlic for 2–3 minutes. Add the ground beef and cook until browned. Stir in the spices (paprika, cumin, chili powder), then season with salt and pepper. Let simmer for a few minutes to develop flavor.

  • Step 4

    Fill each croissant shell with the warm meat mixture. Top with fresh white onion and cilantro. Serve with lime wedges to squeeze over before eating.

Chef's tip

For an extra indulgent version, add sour cream, avocado, or shredded cheese.
